Butternut Squash Soup

Our butternut squash soup is quick and delicious way to enjoy the health benefits of squash. Butternut Squash Soup

What you need:
1 (2-3 lb.) butternut squash, peeled, seeded and cut into 1″ chunks
1 lg. yellow onion, chopped
1 qt. vegetable broth

What you do:
In a large soup pot combine all ingredients and bring to a boil. Reduce to medium heat and cook mixture until squash is tender. In batches, purée the soup in a blender. This is a thick soup. If you prefer a thinner consistency add an additional half quart of vegetable broth. Garnish with nutmeg. For a spiced up version of the dish add cayenne pepper as your garnish.
