Sausage Cauliflower Spinach Soup

What You’ll Need:

1 tablespoon coconut oil
1 pound spicy ground Italian sausage
1 onion, diced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon crushed red pepper flakes, optional
4 cups chicken broth
1 bay leaf
3 cups cauliflower florets
3 cups baby spinach
1/4 cup heavy cream

What You’ll Do:

Heat the coconut oil in a large stockpot. Add Italian sausage and cook until browned. Crumble the sausage as it cooks. Stir in onion, oregano, basil and red pepper flakes. Stir in chicken broth and bay leaf, and bring to a boil then reduce heat to medium-high. Cook, stirring frequently, until onions have become translucent. Add cauliflower florets and cook until tender. Stir in spinach and cook until wilted. Stir in heavy cream. Season with salt and pepper, to taste. Serve with crusty french bread slathered with minced garlic and butter.
